Pasta Mama - Hugo's Restaurant


We saw this on a show called "Best things I ever ate" and it looked pretty good to hubby and myself.
We are trying it out for dinner tonight, so pictures to follow later.
Edited to add photo and to say, whilst it was nice, I wouldn't say that it was the "best thing I ever ate"

“Pasta Mama”
Ingredients
145g of pasta (fresh or dry)
2 eggs, beaten
2 cloves minced garlic
2 Tablespoons chopped parsley
1 Tablespoon olive oil (or butter)
1 Tablespoon water
1 Tablespoon of fresh grated Parmesan
1 Tablespoon dry seasonings, (see next)
Mix ¼ teaspoon each or equal parts of larger amount
and save for future use:
garlic powder
oregano
seasoning salt
onion powder

Method:
1) Pull out, set up and prepare all ingredients for the dish.

2) Prepare pasta – fresh takes 2-3 minutes; follow directions on packaging of dry pasta (Leftover pasta can also be used. Add at same time as it is added below and warm in pan with 1 tablespoon hot water before adding eggs.)

3) Turn on medium flame. Pour oil (or melt butter) in 10 inch sauté pan.

4) Add minced garlic and 1 tsp mixed seasoning; sauté together 1- 2 min.

5) Add parsley; add pasta with 1 tablespoon hot water (Make sure leftover pasta or cold pasta is hot before adding parsley or eggs)

6) Add beaten eggs. Mix thoroughly.

7) Add Parmesan, cook through and serve.

Variations: Pasta Mama has as many variations as you can imagine.
Add any vegetables you would put in an omelet, other cheeses, sausage, bacon, chicken; adjust seasonings to taste. Enjoy!

Broccolini, Bacon and Lemon Pasta

We used plain old Broccoli for this photographed. It was also a tad overcooked (thanks hubby!) so was mushy.
DON'T overcook it!
Serves 4
Ingredients
400g Rigatoni (ridged tube shaped pasta)
2 bunches of Broccolini (400g), trimmed and sliced
1/4 cup olive oil (good quality)
4-6 rashers of bacon, remove rind, chopped.
2 cloves of garlic, sliced
1 tablespoon of lemon zest (or zest of one lemon)
1/2 cup of finely grated parmesan (I use Romano instead). Get proper parmesan from a deli.
Sea Salt
Method
* Place large saucepan of salted water on to boil. Once rolling boil is achieved, add pasta.
* 1 minutes before pasta is cooked (refer to the packet you bought), add the Broccolini. Cook for further one minute. Drain and keep warm - in the large saucepan.
* Heat 1 tablespoon of oil in frypan. Add bacon and cook for 3-5 minutes or until crispy.
* Add garlic and lemon zest and cook for one minute or until fragrant.
* Add to pasta and stir through, adding remaining oil and sea salt to taste.
* Add parmesan andtoss to combine.
